Lahori Beef Paya
This dish Paya is famous not only in Pakistan but also among Muslims of Bangladesh and India. There may be hardly a few people who dislike it. We prepare Paya with hoof and trotters of cow and veal. It has many different names in different areas of Pakistan like khrude or Pacha. Pakistanis like to take paya in breakfast to start the day warmly. It makes a good combination with Roghani naan. Paya with chunks of Shank (bong) served with a sesame seed kulcha and chilled lassi for breakfast and that usually skipped lunch after a breakfast a payas.
Journey of Beef Paya
Trotters and Shank meat cooked overnight in a wholesome daig (Pot). Firstly trotter brought and thoroughly cleaned. Then boiled overnight with un-chopped onion and cloves of garlic. Spice Mix was prepared after roasting and grinding of spices. Spices fried along with ginger garlic paste till it is well cooked. Once spice paste is ready it is then added to daig and cooked together for several hours. Finally when this is ready, It is dressed with finely ground Garam Masala Powder Before being packed.
